August 19, 2024 - This Sauvignon comes from our vineyards surrounding the winery based in chavignol in the center of the Appellation. It is a caillotes soil (small chalky stones). Then the pressing is only in pneumatic presses. The vinification takes place in stainless steel tanks with controlled temperature in order to keep all the fine aromas of Sauvignon. This caillotes terroir will give very balanced, fine and precise Sancerre. The bottling will be around may the year after the harvest. A perfect expression of the caillotes soil of Sancerre.
