August 19, 2024 - This Sauvignon comes from vineyards surrounding the beautiful Chateau de Fontaine Audon in the north of the Appellation. It is a flinty (silex) soil. Then the pressing is only in pneumatic presses. The vinification takes place in stainless steel tanks with controlled temperature in order to keep all the fine aromas of Sauvignon. This flinty terroir will give very mineral, fine and precise Sancerre. The bottling will be around july the year after the harvest. A perfect expression of the flinty soil of Sancerre.
